Spinach Quiche


How good are the quiches! Although the most universal of them all is the quiche LorraineThere are as many quiches as there are people in the world who dare to prepare them, as they are tremendously versatile.

The Spinach quiche, cherry tomatoes and feta cheese that we present to you today is delicious and, very important, incorporates vegetable, essential for children (and not so children). Instead of creaman ingredient that is never lacking in every quiche, is made with yoghurt. And the dough… I assure you that it melts in your mouth in a spectacular way. So there are no excuses not to do it!

Spinach, cherry and feta quiche

Ingredients

    For the mass

  • 225 gr. Of flour

  • 1 pinch of salt

  • 150 gr. diced cold butter

  • 1 large egg, the white separated from the yolk

  • 2 tablespoons of cold water

    For the filling

  • 500 gr. frozen chopped spinach

  • 150 gr. cream cheese (Philadelphia type)

  • 2 large eggs and one yolk

  • 3 Greek yogurts

  • 1 tablespoons Parmesan cheese

  • 100 gr. diced feta cheese

  • 10 cherry tomatoes

  • Salt

  • Pepper

How to make spinach quiche

  • We start by making the quiche dough. In a bowl, sift the flour with the salt and add the butter and undo it with your fingers until you get a crumb texture. Add the egg yolk and water, and knead. Wrap in cling film and put in the fridge for an hour.

  • Preheat the oven to 190º. We extend the dough, oil a detachable quiche mold and put it in it. We cover with aluminum foil, put dried chickpeas on top and bake for 15 minutes. Remove the aluminum foil and chickpeas and paint the entire dough with the beaten egg white. Reserve and reduce the oven temperature to 180 degrees.

  • We prepare the filling. Defrost the spinach and drain very well. We beat the cream cheese with the eggs and the yolk, add the yogurt, the Parmesan cheese and season with salt and pepper. Add the spinach and pour everything over the dough. On top we place the diced feta cheese and the cherry tomatoes cut in half.

  • We bake for 30 minutes. It is served hot.
